Pizza Dough
Tried and true pizza dough
Equipment
- Mixer or Blender
- Oil coated large bowl
- some flat surface to allow dough to rise
Ingredients
- 1¾ cup lukewarm water
- 2 tsp Active Yeast
- 2 cups 00 or Bread flour
- 2.5 cups All purpose flour
- 2 tsp Kosher salt
- 2-3 tbsp Olive oil
Instructions
- Combine the lukewarm water and add the yeast. Let the mixture set about 5-7 minutes or until the yeast is pretty frothy. You can add a touch of sugar for the yeast to eat, but I haven't found this is necessary. Optionally, you can use instant yeast and you can just combine the ingredients without letting it froth.
- Put all the flour into a food processor or mixer with a dough attachment.
- Add salt
- Add the water / yeast mixture to the flour a little at a time
- Add the oil to the flour a little at a time. If the mixture is a little stiff, you can add a little more oil.
- When it looks like bread, put the dough into an oil coated bowl and cover with a hot and wet cloth. Let it rise until doubled.
- Take it out of the bowl and separate into smaller pieces depending on the thickness of the crust you prefer. Rex has found that four pieces are optimal, but some of the other cats (namely Merlin) like their crust thinner. Roll these into balls, but be careful not to handle them too much as you want them to rise more.
- Place the balls onto a flat surface and cover for about 2½ – 3 hours (probably don't need as long on a hot day). Keep the balls moist by spraying them with water if needed.
